Answer on I want to make diet food (low cal an fat) for my hubby. Any neat recipes?
Goddess Rice Salad
1 c. uncooked instant brown rice
3/4 c. Italian or vinaigrette salad dressing
1 1/2 c. corn
5 medium radishes, sliced
1 c. steamed Lima beans or green beans
3/4 c. Feta or goat cheese
3 green onions [optional]
Cook brown rice according to package directions, 10 to 15 minutes. Drain [and cool optional] place in bowl and toss with dressing. Add the corn, radishes, beans and cheese and toss.
Serve cold or hot. Excellent fiber, protein packed high in vitamins, minerals and enzymes. Looks beautiful when served.
